Preheat oven to 180 C (350 F).
Soak dates in warm water while preparing other ingredients.
Line the baking pan with baking paper (unbleached and chlorine-free), allow for the paper to slightly overhang so you can easily lift the bars out.
Place the oats, coconut, spices, pumpkin and sunflower seeds in a food processor and pulse until finely chopped.
Add the oat-seed mixture into a large bowl and set aside.
Drain the soaked dates and add them to the food processor. Pulse until they make a paste.
Add the date paste to the oat-seed mixture and add the applesauce, vanilla extract, and chia seeds.
Mix the mixture together until well combined with your hands.
Place the mixture into the prepared baking tin and smooth the top using a silicone spatula.
Bake for 25-30 minutes, or until the edges are golden brown.
Remove from the oven and let cool in the baking dish, then carefully remove and let cool completely on a cooling rack. Slice into bars or squares.
