Homemade Muesli Bars

These comforting muesli bars are a great alternative to store-bought. All natural ingredients and sweetened with dates. You can enjoy these knowing that they are wholesome and nutritious!

Equipment

  • 1 Food Processor
  • 1 9x5 Baking Tin

Ingredients

  • 1 cup rolled oats
  • 1 1/2 cup dates soaked in warm water
  • 1/4 cup shredded coconut
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup apple sauce
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp ginger
  • 1 tbsp chia seeds

Instructions

  • Preheat oven to 180 C (350 F).
  • Soak dates in warm water while preparing other ingredients.
  • Line the baking pan with baking paper (unbleached and chlorine-free), allow for the paper to slightly overhang so you can easily lift the bars out.
  • Place the oats, coconut, spices, pumpkin and sunflower seeds in a food processor and pulse until finely chopped.
  • Add the oat-seed mixture into a large bowl and set aside.
  • Drain the soaked dates and add them to the food processor. Pulse until they make a paste.
  • Add the date paste to the oat-seed mixture and add the applesauce, vanilla extract, and chia seeds.
  • Mix the mixture together until well combined with your hands.
  • Place the mixture into the prepared baking tin and smooth the top using a silicone spatula.
  • Bake for 25-30 minutes, or until the edges are golden brown.
  • Remove from the oven and let cool in the baking dish, then carefully remove and let cool completely on a cooling rack. Slice into bars or squares.
