- Use a high quality butter that has been resting at room temperature, it will make it easier to blend all of the ingredients together.
- You can chop the herbs prior to adding them into the mortar & pestle to fully release all of their aromatics.

- 1 mortar & pestle
Ingredients
- 60 g salted butter
- 1 tbsp fresh rosemary
- 2 fresh lavender flower heads
Instructions
- Gently remove floral petals from lavender.
- Add the lavender and rosemary into the mortar & pestle and grind until aromatic. Add butter and mix together.
- Transfer the herbed butter to a ramekin and refrigerate until chilled. Enjoy on freshly cooked steak.
