When I say this is my go-to breakfast, I am not joking. This breakfast salad has been my staple for years now and although there are different variations there are a few things I always keep consistent.
I love having a savoury breakfast and more importantly I love having something that is jam packed with nutrition to help start my day. There is nothing more important than fuelling your body properly for the day. It may look pretty intricate but it is a recipe you can make in no time at all. You can even prep a few of the items to have them ready to go.
Breakfast Salad Ingredients
- Organic Greens– this is the base of my salad, a handful of organic greens. You can choose whatever you like here, I pick whatever is available seasonally and ready for consumption in my garden. My favourites are rocket (also known as arugula for all my Americanos), watercress, pea sprouts, and tuscan kale.
- A healthy serving of carbohydrates– I usually always have either bulgur or tri-colour quinoa.
- Seeds-my top picks are sesame seeds (both black and white), pumpkin seeds, and sunflower seeds. I usually go a bit seed crazy and add close to a tbsp of each but go your own way : )
- Egg– You can choose your type of egg, I prefer a nice fried egg.
- Extra toppings– broccoli sprouts, avocado, extra-virgin olive oil, goat feta cheese, and flaked salt (this is a MUST!)
Easy to make?
My breakfast salad can be made in a flash, simply add all the ingredients to a plate and voila. I like to chop it all up before eating so all the ingredients and flavours blend. If you are strapped for time, you can make some of the ingredients in advance.

Ingredients

- Fried egg
- Scrambled egg

Toppings
Choose whatever you like!

Finish it off with
- Extra virgin olive oil drizzle, don't be shy!
- Flaked salt
Instructions
- Simply layer all the ingredients onto a plate and voila! I like to chop it up so all the ingredients blend.
