What You Need
Just a few simple ingredients that you most likely have in your pantry, if there are a few things you are missing you can swap them out for similar alternatives.

Wet Ingredients
- apple sauce- I made sure to purchase pure applesauce, with no added sugar or preservatives.
Flavourings
- cinnamon, ginger, vanilla and salt – these give the muesli bars a well balanced sweet and spice hit.
Dry Ingredients
- dates – this adds sweetness to the muesli bars and gives them their chewy texture.
- rolled oats – I like to purchase organic rolled oats but if you only have quick oats on hand that will work just as fine.
- coconut – use desiccated coconut which is a fine, dry coconut.
- sunflower, pumpkin, and chia seeds – I find this blend works beautifully in the recipe but you can always substitute it out for your favourite nuts and seeds.
Homemade Muesli Bars
These comforting muesli bars are a great alternative to store-bought. All natural ingredients and sweetened with dates. You can enjoy these knowing that they are wholesome and nutritious!
Equipment
- 1 Food Processor
- 1 9×5 Baking Tin
Ingredients
- 1 cup rolled oats
- 1 1/2 cup dates soaked in warm water
- 1/4 cup shredded coconut
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup apple sauce
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp ginger
- 1 tbsp chia seeds
Instructions
- Preheat oven to 180 C (350 F).
- Soak dates in warm water while preparing other ingredients.
- Line the baking pan with baking paper (unbleached and chlorine-free), allow for the paper to slightly overhang so you can easily lift the bars out.
- Place the oats, coconut, spices, pumpkin and sunflower seeds in a food processor and pulse until finely chopped.
- Add the oat-seed mixture into a large bowl and set aside.
- Drain the soaked dates and add them to the food processor. Pulse until they make a paste.
- Add the date paste to the oat-seed mixture and add the applesauce, vanilla extract, and chia seeds.
- Mix the mixture together until well combined with your hands.
- Place the mixture into the prepared baking tin and smooth the top using a silicone spatula.
- Bake for 25-30 minutes, or until the edges are golden brown.
- Remove from the oven and let cool in the baking dish, then carefully remove and let cool completely on a cooling rack. Slice into bars or squares.
